The story

Larusée is the story of a family that has set down its roots in Fenin in the Swiss Jura, near Neuchâtel in Switzerland, the historical and iconic birthplace of absinthe. Léon Duvanel, the grandfather-in-law of Jean-Pierre Candaux, Larusée’s founder and distiller, had always dreamed of distilling his own absinthe but was never able to do so. His dream finally came true thanks to Jean-Pierre, who joined forces with his son-in-law Nicolas Nyfeler (also fascinated by the Swiss terroir and the history of absinthe) to revive this spirit that is said to have been the genesis of so many great works of art. The family team at the distillery strives to convey its love for plants and this fascinating spirit that has inspired so many artists and tries to turn each bottle into a unique item.

The people

For the Larusée team, the human hand must be involved in each stage of the production process. Larusée therefore produces an absinthe and a pastis that are entirely handcrafted from the finest Swiss botanicals. Larusée believes in a small-scale production to guarantee an exceptional end result. To this is added a great deal of research and real mastery of a family savoir-faire. These form the bases of the recipe aimed at creating a beverage with an elegant balance that has picked up numerous gold medals at spirit and sommelier competitions around the world.

The tasting

Absinthe has been officially distilled and consumed again in Switzerland since 2005. After many years working away on absinthe recipes dating back to the 19th century, hidden from prying eyes down in the family cellar, the family officially opened the door of the Larusée distillery in Fenin, a small town in Val-de-Ruz, in 2012. The result of their work was a unique absinthe with complex aromas. Larusée brings us an absinthe with an aromatic universe that is deep and subtle with a smooth blend of grand wormwood, green anise and fennel, complemented by a well-chosen and well-balanced bouquet of herbs and spices. Its Le Pastis has even been voted best Pastis!  The Larusée absinthes can be enjoyed as an aperitif with 1 shot of absinthe to 2-3 shots of very cold water for the Bleue and the Blanche, or 3-4 doses of very cold water for the Verte. They can also be enjoyed as an after-dinner drink. Le Pastis is ideal served as an aperitif with 3 to 5 shots of very cold water to 1 shot of Pastis.
